Scottish Recipes - Scotch Woodcock

You would assume from the name of this dish that it is in someway connected with wild game or some other meaty dish. In fact it is a dish made with the "fruits of the sea" and is incredibly simple. Perhaps it is a dish which you could introduce youngsters to cooking by allowing them to try out (CLEARLY YOU WOULD SUPERVISE AT ALL TIMES)

Scotch woodcock (an easy fish recipe)

Ingredients:
4 slices buttered toast OR fried bread
1 oz butter
4 eggs
2 tablespoons milk
Salt & Pepper to season
Anchovy Fillets

Method:
I have assumed you have just made the toast or fried bread. Keep these warm.

Melt the butter into a pan and stir in the eggs and milk, season whilst cooking on a low heat. Once the eggs have thickened, spoon onto the toast and top with the anchovy fillets and serve as a light supper dish.
