Scottish Recipes - Savoury Potato Cakes

This is a recipe for a potato patty which is excellent for breakfast or a light snack, especially when topped with a poached egg.

Savoury Potato Cakes

Ingredients:
2 rashers of Bacon (Diced)
1 small leek or onion (finely chopped)
2 oz mushrooms
8 oz cold mashed potato
Pepper and salt (to season)
1 egg (beaten)
3 tablespoons fine oatmeal
Oil for frying

Method:
Put the bacon, Leek(or onion) and Mushrooms in a frying pan(if Bacon is fatty, you should not require any oil) and cook gently until the vegetables have softened. Set this aside to cool.

Mash the potato well in a bowl and then add the mixture. Season to taste (you should need VERY little, if indeed any, salt) Mix well and shape into flat cakes (patties) approx 1/4 inch thick. Dip into the beaten egg, coat with oatmeal and fry in thehot oil until lightly browned on each side.
Serve hot either on their own or as an extra dish for a main course.
