Scottish Recipes - Prawns in Whisky Cream

This is a very simple combination of a tasty fish dish with Scotland's national drink of Whisky (whiskey is the Irish spelling).

Prawns in Whisky Cream

Ingredients:
1 oz butter
1 small onion
12 oz shelled prawns
5 fl oz double cream
salt and pepper
2 oz grated hard cheese
2 tablespoons whisky
Garnish (commonly chopped parsley)

Method:
Butter 6 ramekin dishes. Melt the butter in a frying pan and add the onion. Fry the onion until soft, then add the prawns and heat through. Adding the whisky cook the ingredients for a further two minutes.

Stir in the cream and remove from the heat BEFORE it reaches boiling point. Season to taste and then pour into the Ramekin dishes. Top with the grated cheese and brown under a hot grill. Garnish if desired

Serve immediately with a potato or pasta dish of your choice. The dish should serve 6
