Scottish Recipes - Honey Cake

This is a cake recipe which benefits from the addition of the honey, making it moist and sweet.

Ingredients:

3 oz Butter
3 oz sugar
2 Eggs, beaten
4 oz clear honey
8 oz self raising flour
1 level teaspoon baking powder

Method:
Set oven to 350F or at gas mark 4. Grease and line a seven inch round cake tin.
Cream together the butter and sugar in a bowl. Adding the eggs gradually, beat in the honey.
Sift together the flour and baking powder and stir into the honey mixture.

Transfer the mixture to the tin and bake for about 35 to 40 minutes or until a skewer inserted, comes out clear. Leave in the tin for about 10 minutes to cool then turn out onto the wire rack.
