Scottish Recipes - Green Tomatoe and Apple Chutney

This is a chutney recipe which uses green tomatoes. To avoid confusion, this is NOT underipe red tomatoes but the green variety of tomato.

Green Tomato and Apple Chutney

Ingredients:
2lb green tomatoes (skinned and finely chopped)
2lb cooking apples (cored and finely chopped)
1lb onions (peeled and finely chopped)
6oz sultanas
4 oz raisins
1/2 oz groudn ginger
10oz brown sugar
1 tablespoon dry mustard powder
1 teaspoon salt
1 pint malt vinegar (wine vinegar may also be used)

Method:
Place the ingredients in a saucepan. Add the vinegar last. Bring to the boil over a gentle heat. Cover and simmer for approx 2 hours, stirring periodically. When cooked, place in clean (jam?) jars and cover with vinegar proof tops. Keep in a cool dry place.
