Scottish Recipes - Apple Chutney

This is a recipe for Apple Chutney which will be known under many names in Scotland. Normally Granny's chutney, but whose granny-well there is a question !!

Granny's Apple Chutney

Ingredients:
2 lb Cooking Apples (peeled, cored and chopped)
2 lb Onions, finely chopped
1 lb Demerara sugar
1 Pt Malt Vinegar
1 oz Ground Ginger
Pinch of mixed spice
Salt to taste

Method:
Put all the ingredients into a large heavy bottomed saucepan. Bring to the boil and simmer for 2&1/2 to 3 hours, until the desired consistency is achieved. Stirring intermittently during the process

Remove from the heat and allow to cool. Spoon into prepared (cleaned) jars and seal as you would jam.
