Walnut Pudding

This is a walnut pudding recipe from the Mediterranean area. Often served at special occasions it can also be served as an everyday pudding.

Recipe Ingredients:

  • Sugar - 1 1/2 cups
  • Eggs - 5
  • Brandy - 1 cup
  • Walnuts - 2 cups
  • Butter - 1/2 cup
  • Flour - 1 cup
  • Baking Powder - 1tbsp


Method:

Wash the walnuts then chop half the walnuts and make the rest into a paste by grinding. In a bowl add sugar, brandy, eggs and blend them well. Add the butter and flour to the blended mixture. Add the walnut paste to it.

Add the baking powder and mix well. Pour the mix in to buttered cake tin to bake the puddings.Bake them on low heat for 50 mins. Once they are baked cover the cake with chocolate cream and chopped walnuts. To serve additional white and/or chocolate cream can be added.
