Turkish Vegetable Salad
This is a couscous alternative to a tossed salad. It contains lots of fresh veggies and spices that will fire up the palette.

- 3 medium tomatoes, peeled
- 1/2 cucumber peeled
- 1 green or red pepper
- 1 onion
- 2 cloves garlic, crushed
- 2 teaspoon parsley, finely chopped
- 3 tablespoon lemon juice
- 4 tablespoon olive oil
- 3/4 teaspoon black pepper
- 1/2 teaspoon parika
Remove seeds from tomatoes, cucumber, and green peppers. Chop all vegetables into very small pieces.
Combine all ingredients and mix well. Serve immediately, or chill for 1-3 hours in the refrigerator.
Chilling the salad will produce a more full flavor.
