Tomato Fish

In this easy delicious recipe cod is baked with tomatoes and mozzarella cheese. You can use another white fish or replace mozzarella with feta cheese if you like more flavour.

Recipe Ingredients:

  • 1 medium onion
  • 4 cod fillets
  • 1 lemon, cut into wedges
  • 3 tablespoons lemon juice
  • 3 tomatoes, cut into wedges
  • 1/4 cup dry white wine


Method:

Preheat oven and place sliced onion over bottom of a baking pan.

Arrange fish over onion and brush with the lemon juice. Sprinkle with salt, pepper, and spices. Bake fish for 15 minutes; remove from the oven.

Place tomato wedges around fish and sprinkle with a little more salt and pepper.

Sprinkle cheese evenly over fish.

Return the fish to oven and bake for another 15 minutes, or until tomatoes are tender.

Serve with lemon wedges and rice.
