Spicy Pepper Crabs
Hot, spicy crab first set fire to Sichuan Province. Adjust the quantity of pepper and chili according to taste.

- 8 crabs
- Salt to taste
- 2 tbsp ginger garlic paste
- oil to fry
- 2 finely chopped onions
- 2 tbsp black peppercorns
- Red & green shredded chillies
- Coriander to garnish
Place the crab pieces in a large bowl, add cold water and keep for 1 hour. Drain the water after 1 hour.
In a pan fry the ginger garlic paste for 3 min. Add the crab meat and fry for 3 min. Add the chopped spring onions and fry for 5 min.
Add pepper corns and fry for another 5 min cook until the crab meat is cooked.
Add the chilli paste and fry for another 5 min. Cook until the water is fully absorbed.
Serve with rice.
