Roasted salmon fillets are a simple way to cook salmon and other fatty flesh fish.

- 2 tbsp basilic
- 8 pieces salmon
- 2 cups bread crumbs
- 1 cup chopped anise
- olive oil
- 1 cup fennel seeds
- 1/2 tbsp lemon juice
- 2 tbsp pepper
- Salt to taste
Rub salt and pepper onto fillets. Add olive oil, lemon juice and keep aside to marinate for 4-5 hours.
In a bowl combine the anise, basilica, rusk crumbs, oragano, and fennel seeds. Dip salmon fillets in the mixture and bake them for 1/2 hour at 150 C.
Sprinkle the herb mixture on top of each fillet. Serve with rice.
