Red Bean Soup

A flavorful beef and bean soup, made with lean ground beef, green beans, tomatoes, onion, and other ingredients.

Recipe Ingredients:

  • 1/2 cup beef
  • 2 potatoes
  • 1/2 carrot
  • 1 red pepper
  • 1 green onion
  • 3 cup beef stock
  • 1/2 cup tofu
  • 4 tbsp red bean paste
  • 3 garlic cloves
  • sugar
  • Salt to Taste
  • 3 tbsp black pepper
  • 2 cups mushroom
  • 1 tbsp soy sauce
  • 3 tbsp parsley chopped


Method:

Cut the beef into pieces. In a bowl mix beef, sugar, salt and soy sauce. Keep aside for 1 hour for marinating.

Cut the potatoes and carrots in cube size pieces. Wash and soak the mushrooms in water for 20 min. Chop mushrooms. Chop the onion and chillie pepper.

In a deep frying pan, add the beef and fry till the beef is almost cooked. Add the beef stock and the red bean paste to it.

Let the stock boil for 5 min. Add the potatoes, garlic, carrot simmer for 10 min. Add the mushrooms, chilly peppers, tofu seasoning with salt and pepper as desired.

Let it simmer for another 10 min. Garnish with finely chopped parsley and serve.
