Traditional Plum Tart Pudding Recipe

This is a recipe for Plum Tart. Sometimes known as Greengage for it's tradtional use of green gage plums it is a delicious (if slightly unusual) pudding.

Plum Tart Ingredients
8oz shortcrust pastry
1lb greengage plums (or other local variety if unavailable)
1 desertspoon sugar
2 beaten eggs
1 pint single cream


Method

Pre heat oven to 400F. Grease a 7inch flan dish. Roll out the pastry on a lightly floured surface then line the dish, trim any excess and bake for 10 minutes. Wash, halve and de stone the plums. Arrange them, cut side down, in the pastry case and sprinkle with sugar.

Beat the eggs and cream together and strain over the plums. Cook for 30-35 minutes until the filling is golden and puffed. Serve warm with additional cream if to taste.
