Pickled Cauliflower

This is a mice light side dish, excellent to be served with rice. Pickled cauliflower can be stored in the refrigerator for a few days.

Recipe Ingredients:

  • 1 cauliflower
  • 1 green bell pepper
  • Hot water
  • 1/2 cup very thinly sliced celery
  • 1/2 cup wine vinegar
  • 3/4 cup Coca Cola
  • Sugar
  • Salt to taste


Method:

In a large bowl, combine cauliflower flowerets and bell pepper strips. Add hot water, cook for 5 min and drain the water.

Add celery and mix well.

In a pan combine white vinegar, wine, salt and sugar and mix well. Pour the mix over the florets.

Stir gently and serve in bowl with rice.
