Pheasant a la Kerrygold
Pheasant baked in maple syrup with chestnuts can be a wonderful treat. Here's an Irish recipe that can be served on special occasions.

Recipe Ingredients:
- 5 pheasants
- 1/2 kg potatoes
- 2 tbsp bread crumbs
- 2 onions
- 2 carrots
- 3 shallots
- 50 g butter
- Nutmeg
- Salt & pepper
- Cranberries
- 250 g chestnuts
- 3 tbsp maple syrup
- Mixed herbs
Method:
In a pan heat the butterand fry shallots and herbs. Add cooked chestnuts and fry for another 5 min. Add bread crumbs and cook until they are golden brown. Season with salt and pepper to taste.
Stuff this filling in each pheasant and close with threads. Braise pheasant breasts with maple syrup.
Arrange pheasants on a greased pan and cook for 1 hour.
Serve with mashed potatoes, nutmeg and steamed cranberries.
