Oxtail Veggi Soup
Oxtails provide the flavor boost to this hearty soup of vegetables, brown rice, and other vegetables.

- 1 kg oxtail
- 4 onions
- 2 cups water
- 4 carrots
- 2 celery stalks
- 3 potatoes
- 2 leeks
- 3 tbsp olive oil
- 1/2 tsp pepper
- Salt to taste
Fry chopped vegetables in olive oil in a deep pan for 5 min. Add the meat and fry for 3 min till the meat lightens.
Add water and on medium heat cook for 40 – 45 min until the meat is cooked properly.
Take the meat out and separate the meat and the bones. Put the meat again to pan. Mash the vegetables and add to the soup.
Simmer for 5 min.
Serve the soup hot with Greek salad.
