Meat Kofte

Minced meat is widely used in Turkish cuisine. Kofte is a ground-meat kebab which is traditionally served with rice pilaf, salad, pita bread, and tzadziki sauce

For US to UK equivalents see this rough guide

Recipe Ingredients:

  • 1 kg ground meat of your choice
  • 1 cup washed and drained rice
  • 1 egg
  • Salt to taste
  • Cumin and black pepper
  • 10 cups water
  • 4 tbsp flour
  • 2 egg yolks
  • 2 tbsp lemon juice
  • butter and red pepper to garnish

Method:

Soak rice in hot water for 15 min.

Combine meat, salt, pepper, cumin, and eggs in a bowl. Mix well and keep aside for 10 min.

Prepare balls and roll each ball in rice. Cook the balls on steam until the meat is cooked.

In a pan add butter and once the butter melts add flour, yolks, lemon juice and butter. Mix well and simmer on low heat.

Add meat balls to the sauce and cook for another 5 min.

Garnish with onions and tomatoes. Serve hot.

As with all recipes which involve cooking and baking a sensible approach must be taken especially when dealing with warm or hot (temperature) ingredients. If you are unable to take due care, please do not attempt to make any of these recipes. All recipes are tried at your own risk.
