Light Salad

This is an amazing summer salad made with melons, green lettuce, mushrooms and eggs. Southern spices add exotic flavour!

Recipe Ingredients:

  • 3 hard-boiled eggs
  • 1 head of lettuce
  • 1 small melon
  • 2 pepperoni sausages
  • 1/2 cup chopped mushrooms
  • 2 peppercorns
  • 100 g firm cheese
  • 5 tbsp olive oil
  • 2 tsp allspice
  • 1 tbsp mustard
  • 3 tbsp vinegar
  • 2 garlic cloves


Method:

Wash the lettuce leaves and drain the water. Dry them on a kitchen paper.

Peel the melon and cut it into cubes.

Take the boiled eggs and separate them into yolks and whites.

Cut the pepperonis in to stripes. Chop the cheese in to small pieces.

In an olive oil fry mushrooms for 3-4 min. Add spices mushrooms, egg yolks, pepper, vinegar, salt and remaining olive oil. Cook for 3 min.

Mix lettuce, melon, pepperoni, cheese and mushrooms in a bowl. Chill and serve.
