Honey Steamed Pudding Recipe and Meal Ideas

Traditional Honey Pudding Recipe

This is a delicious (if slightly unusual) steamed pudding, which is thought to originate from Ulster, which is in the North of Ireland.

Ingredients
3/4 pint milk
6 oz porridge oats
2oz caster sugar
1oz butter
1/2 teaspoon ground cinammon
3 eggs (seperated into whites & yolks)
2 tablespoons honey (to your own personal taste-traditionally clear)


Method

In a saucepan, bring the milk to the boil and sprinkle the oats over it and cook for approx. five minutes, stirring occasionally. Add the sugar, honey, butter and cinammon and mix well. Traditionally some people will also add the rind of a small orange or lemon. Add if to taste.

Remove the mixture from the heat and beat in the egg yolks. Whisk the whites until they are able to stand in soft peaks, and then fold into the mixture. Turn into a buttered pudding basin and cover with a piece of well-buttered greaseproof paper, sealing with kitchen foil.

Place in a steaming dish for 2 to 2&1/2 hours. Serve whilst still warm and serve with warm honey and cream.
