Honey and Orange Tea Loaf Recipe

This is a recipe for Honey and Orange Tea Loaf. A tea loaf is simply a fruit cake which has the texture and slicing ability of a normal loaf. Some even have the taste of a fruity laof. This recipe mixes the sweet flavours of orange and honey.

Honey and Orange Tea Loaf

Ingredients:

  • 6 oz Self raising flour
  • 6 oz Honey
  • 1 oz Margarine
  • 1 Egg
  • 1 level teaspoon baking powder
  • 6 tablespoons full fat milk
  • 1 lg Orange Grated rind
  • pinch of salt
  • Clear honey to glaze



Method:
Pre heat to 350F. Grease and line an 2 lb.loaf tin. Mix the margarine and honey together in a bowl, mixing thoroughly. Add the egg and beat vigorously until completely mixed together.

Sieve the flour, salt and baking powder over the mixture adding alternately with the milk, to the mixture. Sprinkle in the orange rind (some may use the juice of the orange instead, but the rind gives it a firmer texture) and mix well. Spoon the mixture into the tin. Bake for 45 minutes. Remove from the oven, glaze with honey and return to the oven for a further 10 minutes. Remove from the tin and cool on a wire rack. Serve sliced and buttered. Serves 4.
