Honey Onion Fish
Fish with onions is a traditional pairing, but honey makes this dish completely different and unique!
For US to UK equivalents see this rough guide
- 1 cup onions, finely chopped
- 2 bay leaves
- 1 thyme stem
- 1/2 cup olive oil
- 2 tbsp honey
- 2 tbsp white vinegar
- 500g white fish fillets
In a small bowl combine the honey, oils, bay leaves, thyme, and white vinegar. Make several shallow cuts across each fish fillet on both sides and baste each fish fillet with the mixture.
Preheat the olive oil in a deep pan. Place fish fillets in a pan and cook for 10-20 minutes depending on a fillet thickness. Serve with steamed vegetables or a small serve of steamed rice.
