Green Tomato(e) and Apple Chutney Recipe
This is a recipe which uses green tomatoes. This is NOT underipe red tomatoes but the green variety. The mixture of the apples and tomatoes gives this dish a unique flavour in that it is quite sweet but is also a true chutney as well.
2lb green tomatoes (skinned and finely chopped)
2lb cooking apples (cored and finely chopped)
1lb onions (peeled and finely chopped)
4 oz raisins
1/2 oz groudn ginger
10oz brown sugar
1 tablespoon dry mustard powder
1 teaspoon salt
1 pint malt vinegar (wine vinegar may also be used)
Place the ingredients in a saucepan. Add the vinegar last. Bring to the boil over a gentle heat. Cover and simmer for approx 2 hours, stirring periodically. When cooked, place in clean (jam?) jars and cover with vinegar proof tops. Keep in a cool dry place.
