Fruity Brie starter Recipe

Deep fried brie is a popular starter in Scottish restaurants. This recipe gives it a simple twist with the addition of a Scottish fruit with a bit of a "zing"


  • 125g (4oz) cranberries, fresh or frozen
  • 50ml (2 floz) water
  • 50g (2 oz) caster sugar
  • 1 x 5ml spoon (1 tsp) arrowroot

  • 450g (1 lb) brie, cut into 4 wedges
  • 25g (1 oz) flour, sieved
  • 1 small egg, lightly beaten
  • 50g (2 oz) fresh breadcrumbs
  • 75 g (3oz) margarine


Make the Sauce first by placing cranberries and water in a saucepan, cover and simmer for 5 minutes. Stir in sugar and simmer for a further 5 minutes. Stir in arrowroot blended with a little water and cook until thickened.

Then, coat the cheese on all sides in the flour then dip into the egg and coat with breadcrumbs. Melt margarine in frying pan (or if you have a suitably hot deep fat fryer) and fry the cheese wedges on each side until breadcrumbs are golden. Drain well on kitchen paper and serve hot with the cranberry sauce.
