Tweed Kettle (Poached salmon) Recipe

This is a fish recipe which was particularly popular in the early 19th Century. Named after the River Tweed as it was full of fresh salmon, waiting to be poached (in all meanings).

Ingredients for Tweed Kettle
3lb fresh salmon
1 small onion (finely chopped)
12 peppercorns
2 bay leaves
pinch of ground mace
1/2 pint white wine
Cold fresh water


Method:
Place the cleaned salmon in a fish kettle or similar. Add the peppercorns, bay leaves, mace, onion and wine to the ingredients. Pour in enough water to cover the fish (just) and bring to the boil very slowly. Then simmer for about 2 to 3 minutes, then remove from heat. Allow the fish to cool in the water, which will continue to cook.

Serve with a potatoe dish of your choice
