Roast fan potatoes recipe
This is a very simple recipe to make tasty potatoes to combine or accompany any main meal.
- 4 medium potatoes, peeled
- Slice of lemon
- 40 g (1 & 1/2oz) margarine (or butter)
- 1 clove garlic, crushed
- Salt and pepper
- 50 g (2 oz) Cheddar cheese and Parmesan, finely grated
Cut each potato into thin slices almost through to the base. Soak in cold water with a slice of lemon added. Melt the margarine and gently saute the garlic until soft. Drain the potatoes and arrange cut side uppermost in an ovenproof dish. Spoon over the margarine and garlic and season. Bake in preheated oven 190°C, 375°F, Gas No. 5 for 30 minutes, basting occasionally. Sprinkle over the cheeses and continue cooking for a further 20-30 minutes until crisp and golden brown.
