Eggs with Mushrooms
This is a recipe for a Chinese main meal which is commonly served with hot rice.This delicious dish is easy to prepare.

- Mushrooms small - 1/2 kg
- Strawberry Mushrooms - 100g
- Ginger and Garlic - 1 tbsp each
- Rice Wine - 3 tbsp
- Soya Sauce - 4 tbsp
- Pepper - 3 tbsp
- Salt to taste
- Eggs - 5
- Chopped Spring Onions - 3 tbsp
In a deep frying pan add oil and once the oil gets hot add the button mushrooms and the ginger and fry for 5-10 min till the mushrooms are half cooked. Then add the strawberry mushrooms and fry for another 5 min whilst mixing well.
Add salt and pepper according to taste then fry for 2 mins. Add the rice wine and soya sauce. Cook for 5 mins. In a bowl beat the eggs and add this to the mushrooms and fry for 5 more mins. Serve hot.
