Easter Soup

This is a traditional soup from Italy. It uses many of the ingredients which would have been freely available at this time of year in that country and combines them into a great tasting soup.For US to UK equivalents see this rough guide

Recipe Ingredients:

  • Lamb - 1/2 kg
  • Flour - 1 tbsp
  • Salt to taste
  • Butter - 3 tbsp
  • Parsley - 1 tbsp
  • Onions - 1 tbsp
  • Rice
  • Lemon Juice - 2 tbsp
  • Corn Flour - 2 tbsp
  • Egg Yokes - 3


Method:

Please read all the recipe as there are two options. Take the lamb and place in a pan. Add Fresh Water, Some Salt And 1 Small Spoonful of flour and boil Slowly For 30-40 Mins. Add the chopped Herbs , Stirring Them From Time To Time. Some people will now strain the soup having used the lamb as a "stock". If this is the case, then strain the Broth Into Another Casserole/soup dish/pot, add Some Rice (1 Spoonful Per Person), And Boil them for another 30-45 minutes. Alternatively if you have minced the lamb then DON'T strain the soup and merely add any other ingredients. Then, Let them Half-Cool, Prepare And Add The Egg & Lemon Sauce, Stir Well And Serve.
