Traditional Scottish Devilled Game Recipe

This is a recipe for a traditional Scottish Devilled game. The strong game meat flavours mix well with the softer fruit and spice flavours to give a quick and simple, but very rich tasty meal.

Devilled Game

Ingredients:
4 joints of game
2 tablespoons mango chutney
1 tablespoon worcestershire sauce
1 tablespoon Scottish Mustard (if unobtainable French/Dijon Mustard)
2 drops tabasco sauce
1 teaspoon of curry powder (strength according to personal preference)
4 oz unsalted butter


Method:
Preheat the grill to a moderate heat. Mix all the ingredients (except the joints) together and mix until they take the form of a buttery paste. Cut the skin and flesh of the game joints and spread the paste over the flesh and into the flesh of the meat.

Place the joint sunder the grill and grill for 10-15 minutes on each side, periodically basting with the juices that are produced. Test meat with a skewer to ensure that it is cooked through.

Serve with the sauce/juices poured over the joints along with a potato dish of your choice
