Chocolate refrigerator cake Recipe

this is a recipe for a chocolate cake which is suitable for beginners and perhaps even children (suitably supervised) as it requires no baking and very litle use of hot ingredients.

Ingredients:

  • 125 g (4 oz) plain chocolate
  • 125 g (4 oz) margarine
  • 1 x 15 ml spoon (1 tbsp) golden syrup
  • 2 x 15m1 spoons (2 tbsps) Elmlea Single
  • 125g (4 oz) digestive biscuits, lightly crushed
  • 25 g (1 oz) raisins
  • 25 g (1 oz) glace cherries, chopped
  • 50 g (2 oz) chopped nuts

Method:

Grease and line a 450g (1 lb) loaf tin. Melt chocolate in a bowl over a pan of hot water. Add margarine, golden syrup and Elmlea and stir until smooth. Remove bowl from saucepan and cool slightly before stirring in remaining ingredients. Spoon into prepared tin, smooth top and chill in refrigerator until set for about 1 hour. Turn out and cut into thin slices to serve.
