Chicken Melon Soup
This popular soup in China with the sweet taste of winter melon being added to the chicken.

- Winter melon - 1 Cup
- Black Mushrooms - 5
- Chicken Stock - 3 Cups
- Ginger - 4 Slices
- Cooked Ham - 1/4 Cup
- pepper - 2 tbsp
- Salt to taste
- Green Onions - 2
Take the Water melon, Wash it , peel the skin out , take the seeds out. Cut in to medium cube sized pieces. In a deep pan add water and add the melon pieces to the water and boil it until the melon becomes soft. Add mushrooms, Ginger, ham and chicken stock to the melon soup. Boil on low heat for 25 min. add salt and pepper. Garnish with onions and sauces. Serve Hot.
