This is a recipe for meat free burgers. Although most vegetable burgers are regarded as plain and boring, these burgers offer a suitable and ttasty alternative for any vegetarians or simply as a nice change.
Cheesy Vegetabel Burgers
Ingredients:
125g (4oz) cooked potato
125 g (4 oz) cooked parsnips or celeriac
25 g (1 oz) margarine (or butter)
Salt and black pepper (seasoning)
75g (3 oz) cheese, grated
198 g (7 oz) can sweetcorn, drained
1/2, red pepper, deseeded and chopped
1/2, green pepper, deseeded and chopped
1 egg, size 3, beaten
Browned breadcrumbs
Oil for frying
Method:
Mash together potato and parsnips or celeriac with the margarine/butter and season well with salt and pepper. Stir in the cheese and vegetables until well mixed together. Divide the mixture into eight and shape into round patties about 3.5 cm (1 & 1/2 inches) thick.
Dip each burger in egg and then in the breadcrumbs. Heat the oil in a large frying pan and fry burgers for about 10 minutes, turning halfway through cooking, until goldenbrown. May be served with a hot tomato sauce.
