Every recipe website probably has this recipe. Caesar salad was the creation of an Italian, Caesar Cardini, who at the time was a restaurateur in Tijuana, Mexico. According to records, supplies in the Cardini establishment ran short one holiday weekend in 1924 so the chef experimented and that evening the Caesar's Salad was born.

Caesar Salad

Ingredients:

  • 25 g (1 oz) olive oil
  • Fresh garlic (to flavour the oil)
  • 4 rashers smoked streaky bacon, chopped
  • 2 slices bread, diced
  • Assorted lettuce leaves e.g. endive, radiccio, lambs lettuce etc.
  • 3-4 x 15 ml spoons (3-4 tbsps) garlic vinaigrette dressing


Method:
Melt olive oil and fry bacon until crisp. Remove and keep warm. Add the bread to the pan and fry until crisp and golden, adding more olive oil if necessary.

Arrange lettuces in serving bowl and pour over dressing. Toss the leaves until well coated. Sprinkle over the bacon and croutons and serve immediately
