Brown Pudding Recipe

This is a recipe for a steam or boiled pudding. It might have a rather strange name but it is a tasty and satisfying pudding nonetheless. The brown in the name simply refers to the colour due to the use of black treacle.

Brown Pudding

Ingredients:
4oz fresh breadcrumbs
1&1/2 oz flour
3oz shredded suet
1 egg
1/2 teaspoon bicarbonate of soda
3oz soft brown sugar
4 - 5oz black treacle (according to taste)
Milk


Method:
Mix the breadcrumbs, bicarbonate of soda and flour together in a bowl. Then add the sugar and the suet. Again mix well. In a separate bowl warm the treacle (or warm it before placing in bowl) then add the egg. Beat this until well mixed. Then pour this mixture into the dry ingredients along with sufficient milk to make a soft "dropping" consistency.

Place the mixture into a well-buttered pudding basin/bowl. Cover the top with a piece of greaseproof paper and seal with kitchen foil. Steam for 2&1/2 to 3 hours. Turn out the pudding on to a warm serving dish and serve with some more warmed treacle, custard or ice cream
