Beef in Red Wine Recipe

This is a recipe for Beef in Red Wine. This may seem a strange combination for a traditional Scottish meat dish. However, bear in mind the strong links (especially trade) between Scotland and France.

Meat In Red Wine

Ingredients:
1&1/2 lb stewing steak
1 tablespoon seasoned flour
2oz lean bacon (finely chopped)
3 onions (sliced)
7 oz mushrooms chopped (button or other local)
Bouquet garni
1/2 bottle red wine
2 cloves garlic
2 tablespoons vegetable oil
Seasoning (Salt & Pepper)


Method:
Preheat the oven to 300F. Gently fry the onion and bacon until soft (onion) and crispy (bacon). Ensure the mushrooms are well drained then add and fry for a few minutes. Set the mixture aside and keep warm.

If not already cubed by your butcher, cut the steak into 1 to 1&1/2 inch cubes. Dust these with the seasoned flour. Heat the oil in a large, heavy-bottomed casserole dish and fry the meat along with the garlic until brown. Then add the wine, sugar and bouquet garni.

Bring this to the boil, stirring well, then reduce the heat, season if required and simmer for approx. 2 hours until the meat is tender. Remove from the oven and stir in the bacon mixture. Heat again (place back in oven) for 10-15 minutes.
Serve with a potato dish of your choice
