Traditional Irish Balnoonan Skink Recipe

This is a recipe for Traditional Balnoonan Skink. Skink is a very old fashioned term for soup or broth and is used both in Scotland and Ireland.

Balnoonan Skink

Ingredients:
3 sticks celery, trimmed and finely chopped
6 lettuce leaves
4 oz green peas
4 spring onions, trimmed and diced
1 level dessertspoon copped chives
1 & 1/2 pints to 2 pints of chicken stock
3 fl oz double cream
1 egg yolk(only)
Seasoning (Salt & Pepper)
Bouquet garni of: 4 sprigs parsley, 1 sprig thyme, bayleaf


Method:

Place all the vegetables, herbs and seasoning in a saucepan. Pour in the stock. Bring the soup to the boil, then cover and simmer for approx. 30 minutes until vegetables are tender. Remove the bouquet garni, then blend (in a seperate bowl) the cream and egg yolk at the same time. Add this to the soup.

Heat the new mixture thoroughly but do not boil. Add more seasoning if required according to taste.

Serve with warm bread/rolls and garnish with chopped Parsely
