Due to the nature of this dish it is a popular recipe for the health concious. It is also a completely vegetarian dish should that be required.

- Zucchini - 4
- Eggplants - 4
- Onions - 2
- Potatoes - 4
- Green Pepper - 4
- Tomatoes - 6
- Olive oil to fry
- Salt to taste
- Pepper - 2 tbsp
In a container add the chopped onions and olive oil. Mix them well. Add the chopped tomatoes and finely chopped vegetables . Add salt , pepper , chopped parsley and mix all the ingredients well. Keep the tray in oven and bake until the vegetables are cooked on medium heat.
