Almonds with Potatoes

This recipe mixes two distinct flavours containing potatoes and almonds. Almonds are good for health and mind also as they contain various vitamins and the potatoes are rich carbohydrates. This dish can be eaten with rice or tortilas.

Recipe Ingredients:

  • 500 gr potatoes
  • 500 gr ground almonds
  • 2 Tbsp minced onion
  • Bread Slices - 2
  • 2 cloves garlic
  • 1 tsp saffron
  • Bay leaf -1
  • a touch of powdered cloves
  • buttered breadcrumbs
  • olive oil for frying
  • salt to taste
  • freshly ground black pepper


Method:

In a pan add oil and fry the bread which is chopped as cubes. Add garlic, bay leaf and minced onion to the pan. Fry for 3-4 min till the onions become tender. Fry for 5 more mins. Keep aside. Add the almonds, and mix with saffron, salt and pepper. In a baking dish add the sliced potatoes(peeled). Add the almond mixture as a layer on the top of the potatoes. Add water to the potatoes and the bread pieces. Add salt and pepper to taste. Keep in an oven and bake until the potatoes become brown.
